Ingredients:
For the Salad:
4 cups arugula
2 cups spinach
1 cup cherry or mini roma tomatoes, halved
1/2 cup Kalamata olives, pitted
1 ripe avocado, diced
1/4 cup crumbled feta cheese
For the Olive Oil Dressing:
1/4 cup Rushworth Gold extra virgin olive oil
2 tablespoons Lisadurne Hill balsamic vinegar
1 teaspoon Dijon mustard
Healthy Salt and pepper to taste
Preparation:
Step 1: Prepare the Salad Ingredients:
Wash and dry the arugula and spinach, then place them in a large salad bowl.
Halve the cherry tomatoes and dice the avocado.
Add the cherry tomatoes, Kalamata olives, diced avocado, and crumbled feta cheese to the salad bowl.
Step 2: Make the Olive Oil Dressing:
