Our Australian classic balsamic vinegar is seriously yummy. You’ll be surprised how good it is. We blend our mosto cotto with a high quality red wine vinegar. It then spends over 7 years in a series of wooden barrels known in Italy as the ‘batteria’ (French oak, American oak, cherry, chestnut, mulberry and juniper). It then gets stored in a 80L oak barrel with a tap, waiting to be transferred into one of our cute little 100ml Italian balsamic vinegar bottles.
Description
How we make our best balsamic vinegar in Australia. Every March, we ‘tirage’ the balsamic vinegar barrels. Most of the vinegar in the last (juniper) barrel is pumped into the 80L oak barrel with the tap. The vinegar in the second last barrel (mulberry) is pumped into the juniper barrel and so on. Finally, the vinegar in the first French oak barrel is pumped into the American oak barrel.
Then the French oak barrel is filled with this year’s new mosto cotto & red wine vinegar.
Each year we lose 5% of the vinegar in the barrels to evaporation. It is called “the angels’ share”.
So over time, the vinegar takes on the characters of the wooden barrels & becomes more viscous & intense in flavour. Seriously yummy and the perfect aged balsamic vinegar.
