Grape juice is called a ‘must’. When it is reduced by heating, it is a ‘cooked must’ or as the Italians say “mosto cotto”. The production of mosto cotto is always the first step in making a true balsamic vinegar.
Description
To make mosto cotto, we firstly grow the Trebbiano grapes. We then take great care to simmer the juice for 2-3 days as slowly as possible, reducing it to a third of its original volume. It is then aged in an oak barrel. The result? A sweet, sticky syrup ideal for pouring on ice-cream, strawberries or pancakes. Also excellent with a sharp hard cheese or with our award winning premium EVOO Hojiblanca with some crusty bread to dip.
