Best Pumpkin Soup Recipe with Cashews and Olive Oil

Make this one of your easy ‘go to’ pumpkin soup recipes.

Enjoy this easy recipe as an entree or main. If you’re a busy parent and find yourself out for sport events after school, this is the ideal solution rather than arriving home having to cook from scratch. Make a big batch (double ingredients) and freeze some as a backup.

Ingredients:

For the Olive Oil Dressing:

1 medium sized butternut pumpkin

1 medium brown onion

1 clove garlic

4 Tablespoons Lisadurne Hill Olive Oil

¼ Tsp Cayenne Pepper Powder

Pinch Black Pepper Ground

1 Tsp Cumin Powder

½ Tsp quality salt (Celtic)

1 Cup Vegetable Stock (home made if you can)

2 Cups Water

2/3 Cup raw cashews (can omit if you cannot eat nuts)

Pinch Nutmeg

Preparation:

Step 1: Prepare the Ingredients:

  1. Roughly chop onion into medium slices
  2. Remove pumpkin skin and seeds and chop into medium cubes
  3. Press garlic clove or dice
  4. Have your cashews ready
  5. Get your Hill Paddock EVOO ready
  6. Assemble your herbs and spices and water so you can add them with ease.

Step 2: Cook the pumpkin soup:

  1. Add olive oil to saucepan on medium heat
  2. When oil is heated, add onion & stir occasionally until nearly transparent
  3. Add pumpkin cubes &  garlic & continue to stir for approximately 5 minutes
  4. Add vegetable stock, cayenne, salt & cumin powder
  5. Increase heat to medium-high until liquid is bubbling then reduce heat to simmer and add the cashews. Stir occasionally until pumpkin is soft. (Approx. 30 minutes) You can add water in small amounts if the water in the pot is looking low.
  6.  Once pumpkin is soft turn off heat and blend with hand mixer or put the mixture in a blender (careful not to over-fill). You can always blend in batches if needed.
  7.  Serve with a sprinkle of cracked black pepper and nutmeg.
