Chickpeas are extremely versatile and especially popular with vegetarians and vegans. They can be used in curries, burgers, dips, stir fries, salads as a snack or as a side dish, as we use it here.

We recommend this spiced roasted chickpea recipe as a side to our best pumpkin soup recipe. Both are super easy to prepare and you can make extra to save time.
Ingredients:
1 Tin chickpeas (garbanzo beans) washed and drained. As an alternative, you an use dried chickpeas that are soaked in water (Allow 2 days extra – see preparation below).
2 Tbsp Lisadurne Hill Angus extra virgin olive oil;
1 Tsp cumin;
1 Tsp paprika;
Salt and pepper to taste.
You can experiment with the seasoning. Try ginger, garlic powder, onion powder, cardamon powder, cayenne pepper powder, smoked paprika, turmeric in different combinations to find your favourite flavour. Also keep seasoning choices in mind, if you are adding this recipe as a side dish.
Preparation:
Step 1: Preheat oven to 400°F (200°C) & prepare the chickpeas
Tinned chickpeas: Drain tin and rinse with water and leave to dry out a little so the oil doesn’t run off the outsides when added.
OR
Dried chickpeas: 2 cups soaked over night. Rinse then soak again for a second night. Rinse ready to cook.
Step 2: Add Olive oil & spices:
Toss chickpeas gently with olive oil first, add spices and toss some more until well coated.
Step 3: Bake in Oven:
Spread chickpeas out on baking paper and roast for 25-30 minutes until crispy. You can bake for longer depending on your oven and how crunchy you like them. If you do increase the cook time, keep an eye on them in the oven so they come out as you would like.
Allow to cool for approximately 5 minutes.
Enjoy as a side dish or store in cupboard for a healthy snack.
